Our roasting team develops this beautifully balanced coffee to a medium roast for maximum sweetness and flavor, making it ideal for your brew method of choice - from pour over to espresso.

We take great pride in creating extraordinary decaf experiences for our guests and this community lot from the mountainous Department of Cauca does just that. Cauca's fame as a growing region stems from its high elevation (resulting in cooler nighttime temperatures - a good thing!) and the efforts and tradition of the local smallholder farmers, who pooled their harvests to bring us this remarkable Sugarcane EA decaffeination lot.

Sugarcane EA Decaffeination uses a naturally-derived compound called ethyl acetate - an organic compound created through a beneficial partnership with Colombia’s sugar cane industry - mixing the alcohol derived from fermenting sugar cane with acetic acid, commonly found in vinegar. The resulting compound proves to be an effective, natural solvent of caffeine, whisking away the buzz while leaving the flavor of the coffee well-intact.
